Seasoned Breadcrumbs: Breadcrumbs are the foundation for a good shake-and-bake recipe. A little bit of cornmeal adds flavor and keeps the coating extra crispy.
Seasoning: The secret to this coating is in the seasonings. I use a blend I always have on hand but feel free to swap it up with your favorites.
Chicken: Any chicken pieces work perfectly with Shake ‘n Bake! Breasts, legs, thighs, chicken tenders, and especially drumsticks will come out flavorful and juicy with a classic crunch.
How to Make Shake and Bake
Homemade Shake ‘n Bake mix tastes way better than the store-bought version!
- Whisk all breadcrumb mixture ingredients except oil (recipe below) until well combined.
- Mix in oil.
- Beat egg and dip chicken into the egg and then the coating.
- Bake chicken until crispy and cooked through.
Storing Shake and Bake Chicken
- Keep leftover shake and bake chicken in a covered container in the refrigerator for up to 3 days.
- Reheat pieces in the air fryer for the best, crispiest exterior.
- Freeze cooled chicken for up to 3 months, thaw overnight in the refrigerator before reheating.

- 3 pounds bone-in chicken
- 2 eggs
Shake and Bake Mixture
- 1 ½ cups bread crumbs
- 2 tablespoons cornmeal
- 1 tablespoon cornstarch
- 1 teaspoon paprika
- 1 teaspoon celery salt
- 1 teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon dried basil
- 3 tablespoons vegetable oil
Instructions

Preheat the oven to 400°F. Grease or line a rimmed baking sheet with parchment.

In a medium bowl, combine breadcrumbs, cornmeal, cornstarch, paprika, celery salt, onion powder, garlic powder, salt, pepper, and basil. Mix well.

Add the oil and mix until fully incorporated.

Whisk the egg and dip the chicken pieces into the egg.

Dip each chicken piece into the coating, gently pressing to adhere.

Place on prepared baking sheet and bake for 35 to 40 minutes or until crisp and the chicken is cooked through.
Notes
- Boneless chicken breasts will need about 25 minutes in the oven.
- This recipe makes enough coating for 3 pounds of chicken. Discard any remaining coating that has touched raw chicken.
- Copycat Shake and Bake coating can be made ahead and stored in resealable bags in the freezer for up to 6 months until ready to use.

can I cook in a air fryer instead of oven if I can what temp do I cook it on?
Hello Brittany. Yes, this can be cooked in the Air Fryer. Preheat it to 375F. Bread the chicken. Place in the air fryer basket (don’t overcrowd). Cook for 25-30 minutes, flip halfway through. Check to make sure it has a temperature of 165F. Cooking times may vary between models. I hope that helps.
I like making my own Sake and bake, l want to make your version, with taco seasoning. My question is do l use all your spices plus the taco seasoning or just the — crumbs, cornmeal, cornstarch & taco seasoning? please answer, l want to make this. Thank you ❤️
You can replace the seasonings with the taco seasoning. You can taste a little bit of the crumbs and add extra salt if needed before use. Let us know how it goes!
I like to make my own Sake n Bake for both Chix & pork. l never thought of using Taco seasoning in it, but sounds wonderful. My question, l want to use your bread crumb recipe, do l omit all your spices, just use your– crumbs, cornmeal, cornstarch & taco seasoning, to make this. ,or do l need your spices also. If I want to make and freeze this mix (mix only, not prepared chicken) is it just the dry ingredients, or do I need to add the oil before freezing?
I would combine the seasoning with the oil before freezing. Then when ready to use you can just scoop out what you need.
