Hot Cheesy Philly Cheesesteak Dip is a crowd pleasing appetizer that is easy to make, cheesy and so delicious! Inspired by the classic Philly Cheesesteak sandwich, this cheesesteak dip served with tortilla chips or bread slices, will definitely be the winner at your next party!

Perfectly cooked ribeye steak (medium rare), sauteed onions and green peppers are smothered in a smooth and creamy cheese sauce then baked till golden and bubbly. All those wonderful philly cheesesteak flavors and textures we love so much are found in this delicious hot cheesy dip recipe!

Easy Cheesy Dips for Game Day

Hot dips are a great addition to any playoff party menu and this cheesesteak dip is no exception! Serve it alongside Baked Buffalo Wings, Crispy Oven Baked Potato Skins, Pigs in a Blanket and a 7 Layer Dip for a perfect party menu your guests will remember!

The most important tip for this recipe is to slightly undercook your steak as it will cook more while the dip bakes and you don’t want it overcooked or chewy!

How to Make Hot Cheesy Philly Cheesesteak Dip

  1. Season and cook steak, remove and set aside.
    • Remember to remove steak once it reaches medium rare temperature of 135˚- 140˚F since it will cook further when it is assembled and baked.
    • It is important to allow the steak to rest before cutting, this keeps the meat extra juicy and delicious
  2. In the same pan that the steak was cooked in, saute onion and green pepper in butter till tender.
  3. Add the steak, peppers and lots of provolone cheese to the creamy base and top with shredded cheese.
  4. Bake until golden brown and bubbly

This dip can easily be assembled ahead of time and baked just before serving. Leftovers can be reheated in the oven at 325°F until warm and melted.

What cut of meat is best for Philly Cheesesteak Dip?

The ultimate cut of beef for a Philly Cheesesteak is a ribeye, it really is the king of steaks! I love using ribeye for this cheesesteak dip, but you can also use any steak. Sirloin is flavorful and will work well but you can also leftover steak or even leftover roast beef!

In a pinch? Use deli roast beef, chopped up (or Steakums) for a quick version. Even ground beef with onions and green peppers (like I use in my Crockpot Philly Cheesesteak Sandwiches) would work!  Just be sure to keep that beautiful beef, onion and green pepper flavor combination and top it with loads of luscious cheese; you won’t go wrong!

What Goes in a Cheesesteak?

Cheesesteaks have different ingredients depending who you ask so, like most recipes, add what you love! Top it with pepperoncinis, add cheese whiz, chop up some mushrooms, swap the provolone for your own favorite.

You won’t have to call an audible at the line of scrimmage with this Philly Cheesesteak in your playbook! This delicious hot dip is the perfectly executed game play that will make you the big winner this playoff season!

Hot Cheesy Philly Cheesesteak Dip

Hot Cheesy Philly Cheesesteak Dip is a crowd pleasing appetizer that is easy to make, cheesy and so delicious!

Ingredients  

  • 8-10 ounces rib eye steak * see note
  • 1 tablespoon olive oil
  • 3 tablespoons butter
  • 1 onion finely diced
  • 1 green bell pepper finely diced
  • 8 ounces cream cheese softened
  • ¾ cup sour cream
  • ½ teaspoon garlic powder
  • 1 tablespoon Worcestershire sauce
  • 2 ½ cups provolone cheese shredded, divided

Instructions 

  • Preheat oven to 375°F.
  • Preheat a cast iron pan to medium high heat. Season steaks with salt and pepper. Sear steak to medium rare, about 3 minutes per side. Set steak aside to rest.
  • Reduce heat on the pan to medium-low. Add butter, onions and green peppers to pan. Cook until tender and onions are cooked through, about 5 minutes. Cool.
  • In a bowl, combine cream cheese, sour cream, Worcestershire sauce, garlic powder and salt and pepper to taste. Mix until combined with a hand mixer.
  • Remove any fat and dice steak. Fold in onions & peppers and 2 cups of cheese. Place into a greased 2 QT dish. Top with remaining cheese and bake 20-25 minutes or until golden brown on top.
  • Serve with bread, sliced hoagie rolls or tortilla chips.

Notes

Using steak (or leftover steak if you have any) adds the best flavor to this dip. If you're short on time or would like to make this recipe easier, you can substitute 6oz deli roast beef.

Dairy doesn’t always do so well in a slow cooker but if you heat it on low and then keep it on warm once it is hot enough, I think it should be fine (as long as it isn’t sitting for hours on end).   1. I’m so confused!! Have you altered the recipe? I could have sworn you used to use brown sugar and no worchesterire sauce?!

    1. So sorry for the confusion Jill, yes, the recipe has been updated slightly. We’ve remade the recipe with real steak in place of the deli roast beef to improve the texture and really give it that ‘cheesesteak’ flavor (leaving a note at the bottom about using deli beef if preferred). In recipe testing we found that the Worcestershire added great flavor (and the tsp of brown sugar was no longer needed).

      Here is the original ingredients list. Directions are the same with the exception of the steak of course! Enjoy!
      8 oz. cream cheese, softened
      ¾ cup sour cream
      1 onion, thinly sliced
      3 tablespoons butter
      1 teaspoon brown sugar
      1 green pepper, diced
      1 clove garlic
      6 oz. deli roast beef, roughly chopped
      2½ cups provolone cheese, grated & divided (can substitute with mozzarella if preferred)

  5. Im sorry to say that this dip does not come close to tasting like a”Philly Cheesesteak”. It is more like a hot roast beef sandwich dip and taste really good. You really should have asked someone who has actually had an authentic chesesteak (not one from a mall) before you named this dip.

    Other than that…i will make it again but call it something different.

  7. Hello, I had a friend make this for an ugly Christmas sweater party and it was a big hit. I want to make this for a family Christmas but want to do this in a slow cooker. Do you think I should prepare as listed but heat it up in the slow cooker?
