I actually learned how to cook the perfect steak at culinary school bootcamp last year. Grilling a perfect steakhouse style steak in your own backyard is actually pretty easy! You’re looking for delicious flavor, caramelization and cooking the meat to the right temperature.
When cooking a steak, I use a very high temperature to lock in the juices and flavor and then move it over to an indirect heat to finish the cooking process.
Kingsford® Professional Briquets provide the perfect high heat for steakhouse style dishes (and can be found at most grocery or hardware stores). Using a charcoal grill provides an incredibly flavorful sear and a delicious steak.
While there are lots of great choices for steaks to put on the grill, I personally think one of the best steaks for grilling is a ribeye (or rib steak). It has lots of marbling creating the perfect tender & juicy steak. Other great choices include tenderloin or sirloin.
Prepare Your Grill
Placing your coals on one side of the grill allows you to have a high temperature on one side for searing and an indirect heat for finishing the steak. This results in the perfect steakhouse style steak!
- Preheat coals by placing Kingsford® Professional Briquets in a mound towards one side of the grill.
- Using a match, light the coals and allow about 15 minutes for the flame to extinguish and the coals to become grey.
- Oil the grill just before adding the steaks by placing oil on a paper towel and using tongs to rub the oil on the grill.
Prepare Your Steaks
- Remove steaks from the refrigerator and set on the counter 30-60 minutes before grilling.
- Remove any large thick pieces fat pieces on the outer edge to avoid flare ups. Score any remaining fat on the edges of the steak so the steak doesn’t curl up as it cooks.
- Just before grilling, season your steaks well with salt & pepper or your favorite steak seasoning mix.
How to Cook the Perfect Steak
- Place steaks on the hottest side of the grill (where the coals are) and sear. Note: To get a crosshatch pattern, place steak on a 45 degree angle. After one minute, rotate 90 degrees. Repeat on the other side.
- Continue cooking over indirect heat to desired temperature (printable recipe below).
- Once steak has reached desired temperature, remove from the grill & top with softened butter or flavored butter.
- Rest 5 minutes before serving to redistribute juices.
How to Cook the Perfect Steak
Ingredients
- 2 Ribeye Steaks 1-inch thick
- salt and pepper to taste or steak spice
Parsley Garlic Butter
- 1 stick salted butter ½ cup, softened
- 1 ½ teaspoons lemon juice
- 1 clove garlic minced
- 3 tablespoons fresh herbs chopped
Instructions

Prepare butter below if using.

Preheat Kingsford Professional Charcoal until coals are grey (approx. 15 minutes)

Place steaks on the hottest side of the grill (where the coals are) and sear 2 minutes per side.

Move steaks to the indirect heat side of the grill to complete cooking to desired temperature. (For a 1" ribeye steak cook an additional 4-5 minutes after searing for medium-rare or an additional 6-7 minutes for medium)

Once steak has reached desired temperature, remove from the grill. Top with butter or garlic butter and let rest 5 minutes to redistribute juices.
Parsley Garlic Butter

Mix all ingredients. Place on plastic wrap and roll into a log. Refrigerate 1 hour.

Slice into rounds.
