Zucchini: Choose medium sized zucchini squash to ensure a great texture and easy grilling. Slice them into planks to prevent slipping through the grate. Yellow summer squash can be prepared the same way.

Marinade: Keep it simple with minced garlic (or use 1/2 teaspoon garlic powder), olive oil, and a squeeze of fresh lemon juice.

Garnish: Sprinkle fresh herbs like basil, dill, or parsley after grilling for added summery flavor. Shredded Parmesan cheese or feta are great on grilled zucchini too.

Variations: Try your favorite spices like oregano, thyme, or red pepper flakes. Add lemon zest for more lemon flavor

How to Grill Zucchini

This is one of those summer zucchini recipes that’ll quickly become a favorite! Fire up the BBQ (or a grill pan) for a quick and simple side dish.

  1. Prep: Slice the zucchini into long strips in ½-inch to ¾-inch thick (per the recipe below).
  2. Season: Add oil, seasonings, and lemon juice and toss to coat.
  3. Grill: Place the zucchini on the grill and cook for 2-3 minutes per side.

  • Zucchini can be tossed in the seasonings and marinated for up to 24 hours in advance.
  • Cutting zukes horizontally keeps them from slipping through the grates. You can also use a grill basket or cut them into rounds and thread them on skewers

Storing Leftover Zucchini

For best results, keep leftover grilled zucchini in an airtight container in the refrigerator for up to 3 days. Enjoy it in salads, stir-fries, or reheat in the microwave. Leftovers are also a great addition to lasagna.

Grilled Zucchini

Ingredients  

  • 2 medium zucchini about 6 to 8 oz each
  • 2 tablespoons olive oil
  • 1 clove garlic minced
  • ½ teaspoon dried basil leaves or oregano
  • 1 lemon divided
  • seasoning salt & pepper to taste

Instructions 

  • Preheat the grill to medium-high heat.
  • Slice the zucchini into long ½-inch thick slices and place them on a plate or baking sheet.
  • Drizzle with olive oil and sprinkle with garlic, basil, salt & pepper. Squeeze half of the lemon over the zucchini and toss to coat.
  • Add the strips to the preheated grill in a single layer and cook for 2-3 minutes per side or until tender crisp.
  • Serve immediately.

Notes

  • Zucchini can be tossed in the seasonings and marinated for up to 24 hours in advance.
  • Cutting larger veggies helps ensure they don’t slip through the grate.
  • If you’re using a really large garden zucchini, cut the zucchini in half and remove the seeds if needed. The zucchini can be cut into large ½ moons instead. An extra large zucchini may have tougher skin that can be peeled if you’d like.
  • Zucchini cooks very fast, so ensure it doesn’t overcook! Don’t cut the zucchini too thin. 
  • If you’ve grilled meat, the zucchini can be cooked while the meat rests.
  • If you have fresh herbs, they are best sprinkled on the zucchini after cooking.
