Creamy Cucumber Tomato Salad is the perfect dish for spring and summer (in fact, I make it all year round). It is versatile, packed with deliciously healthy flavors and it lasts for several days in the fridge! I love options that I can prep in advance and enjoy all week for lunch or a quick side at dinner.
Sometimes the simplest ingredients make the best dishes, in this case ripe juicy tomatoes, crisp cucumbers, sweet white onion and fresh herbs tossed in a delicious creamy dressing. The combination of tomatoes, cucumbers and onions is classic (like in Greek pasta salad) and for good reason!
The cucumber in this salad makes it very refreshing, I like to leave the skin on the cucumber for added flavor and texture. You can use any kind of tomato in this recipe, including cherry or grape. Whatever you prefer, or have on hand will work well. Because the flavors of this dish are very simple, you’ll want to choose the best tomatoes you can and if it’s summer and you happen to have garden fresh, that’s definitely a bonus!
I mentioned that this recipe is versatile; you can use the tomato of your choice, however you’ll want to use white onions (with a white papery skin). These are different than a typical yellow onion as they have a milder flavor and are a bit sweeter. I sometimes soak the onion slices in ice water while I’m preparing the rest of the ingredients so it has a little bit less “bite”.
Keeping in the versatile spirit of this recipe, you can use your favorite herbs in this recipe (I used parsley, dill and basil), but whichever you choose, fresh is best. There is only one ingredient that I recommend sticking to solidly, and that is the delicious Ranch dressing!
Creamy Cucumber Tomato Salad pairs well with grilled chicken for a quick dinner, or it makes for a great healthy lunch. The simple ingredients make it an easy weeknight staple and you can grab everything you need at Walmart. Considering that the salad gets yummier as it rests in the refrigerator, it is practically perfect for picnics and parties; you can make it ahead of time and serve later for rave reviews!

Creamy Cucumber Tomato Salad
Ingredients
- 3 large ripe tomatoes
- 1 English cucumber
- ½ white onion thinly sliced
- fresh herbs for garnish, parsley, basil and/or dill
Dressing
- ¼ cup mayonnaise
- 3 tablespoons sour cream
- 1 teaspoon apple cider vinegar
- ½ teaspoon granulated sugar
- ¼ teaspoon garlic powder
- ½ tablespoon chopped fresh dill
- ½ teaspoon chopped fresh parsley
- ½ teaspoon thinly sliced fresh basil leaves
- ¼ teaspoon seasoned salt
- ¼ teaspoon black pepper
Instructions

Combine all dressing ingredients in a small bowl. Mix well.

Dice tomatoes and cucumbers into bite sized pieces.

Add vegetables and dressing into a medium sized bowl.

Toss well and season with salt & pepper to taste.

Serve immediately or refrigerate up to 3 days.

Delicious!! double all the ingredients or you’ll run out. After cutting the cukes I sprinkled them with salt to draw some moisture out of them. Be sure to rinse and drain them before using in the salad. I left the cherry tomatoes from the garden whole. The salad was perfect 3 days later. Don’t be shy with those fresh herbs either. Everyone who ate this wanted the recipe!

This was amazing! I had it alongside lasagna. I used white wine vinegar and dried basil and dill since I didn’t have fresh.
Gee, was I imaging things when I read “fresh herbs for garnish parsley, basil and/or dill” in the main ingredients and also “½ tablespoon each fresh dill, fresh parsley and fresh basil” very plainly in the dressing ingredients? Along with “¼ teaspoon garlic powder and season with salt & pepper to taste”?
And yet, I saw 3 people asked what fresh herbs/spices to use?
I was so happy to find this recipe. It sounds so close to one that I had years ago, but lost. I will sure be shopping for tomatoes and cucumbers now! The other salad recipes here look amazing too; I will definitely be trying them also.

Can people not read, or are they just to lazy to follow through with complete instructions?

This was delicious! I made a few minor adjustments to the recipe using what I had on hand.
I used a regular cucumber peeled and seeded. A large yellow tomato and Greek yogurt vs sour cream. I added no salt and it it plenty of flavor with the fresh herbs. Will definitely make again
Soooo good. Used the first cuke out of the garden. Salted both tomatoes and cukes for 15 – 20 minutes before I put together, I would maybe do a bit longer next time. Will be using this every time I pick a cuke and/or tomatoes!
